Hydrating Coconut Water Fruit Popsicles

Luca has a serious case of popsicle addiction. I will often find popsicle sticks in the most random spots in my house. He has been known to eat a whole box of them in one night. Crazy boy. 

ANYWAY, I had been wanting to pick up a new popsicle mold to be able to make him homemade popsicles that aren't full of crappy refined sugar and colourings. I recently ordered this super cute classic one (linked below) off amazon! I am in love.

I chose to make the first batch using coconut water and some local seasonal fruit! YUM!! They turned out so good.

For the popsicles I used: 

  • 1 squeeze of lime + about 2 cans of organic coconut water
  • blueberries
  • raspberries
  • white nectarines
  • peaches

Drop the fruit into the popsicle mould and then cover with coconut water (mixed with a squeeze of lime)

Wait a couple hours until frozen and enjoy!!

Hydration is so important all year round, but in the summer months it is especially important. With the rising temperatures, we lose more water and electrolytes via sweating. 

Coconut water is literally nature's gatorade (but sooo much healthier). It is super high in potassium (4 x more so than bananas) which is a key electrolyte lost during sweating (helps keep your brain and nervous system in tip top shape among many more important functions). It is also naturally low in sugars meaning it won't spike your blood sugar like the conventional sports drinks.
