Lavender Infused Honey DIY

The front of our landlords house is covered in big beautiful purple lavender bushes. Every time I walk past them I drag my hands through them and then proceed to give my hands a big sniff. I LOVE the scent of lavender. I think it is up there as my top flower scent. I could bath myself quite literally in tubs of lavender and be so content! 

The other day Luca came home with a bundle of fresh lavender our landlord had given us. I let it air dry in our bedroom for a couple of days before putting it to use. 

Funny story... my first job was actually a lavender "rubber". Yup, rubber. A sister of a friend of my moms owned a lavender farm on the island and hired me to rub the lavender flowers off her lavender plants. To be honest this may have been the most CHILL job ever. So, what I am getting at here is I am pretty much a professional lavender rubber. No big deal or anything :)

 

Back to this post.. So after drying the lavender I rubbed off all the buds and set them aside. 

I was contemplating what to do with the lavender and it occurred to me that lavender infused honey may just be the best thing ever. 

Lavender has a number of benefits, especially when used in aromatherapy

  • It helps ease headaches
  • Improves sleep quality 
  • Reduces anxiety and emotional stress 

While with this honey you may not be getting therapeutic doses, it sure can't hurt! 

Lavender Infused Honey

What you will need:

  • 1 TBSP dried lavender
  • 1 cup honey
  • 1/4 cup water 

Heat the honey and water on medium heat over the stove and whisk until the honey and water have formed a syrup consistency. Bring the heat down to low and stir in the lavender. Cover with a lid and simmer at a very low temperature for 40-50 minutes (covering the pot helps keep the fragrant volatile oils from escaping in steam!). 

Once your honey has been sitting on the stove for a good amount of time take it off the heat and strain the honey through a tea strainer into a glass storage container. You can then compost the used lavender buds.

Ta-da! Now you have beautiful tasting honey!

This is seriously delicious in a latte, matcha or iced coffee!
