Holy Summer in April, am I right?!

We have been having some crazy unusually hot weather lately here on the west coast. While it worries me in one sense from an environmental stand, I can't help but try and soak up as much of it as I can. If I could, I would live in shorts, tank tops and flip-flops year round. When you live in a city where it rains for 8-9 months of the year, its natural to get overly excited about weather like this. 

We even decided to take a mini road trip across the border to Bellingham. We found this beautiful spot in Larabee State Park and soaked up the sun in the hammock for a good 5 hours!

To celebrate this heat wave I figured it was about time I brought out my favourite popsicle mold again (BPA free plastic!). I have been on a spicy kick lately and wanted to experiment adding a bit of cayenne pepper to the tropical fruit for a unexpected twist. I chose to use pineapple and mango as the base, because well they are sweet enough so there is no need for extra sugar, and you can never really go wrong with these fruits. 

I quickly realized I had added a bit too much spice when Luca tried them. I guess I just have a higher tolerance for it?! I adjusted the amount in the recipe below to be more of a hint of spice, and not dominating, but by all means add as much or as little spice as you like!

Tropical Popsicles with a Twist! 

  • 1.5 cups frozen mango
  • 1.5 cups frozen pineapple
  • Juice from 1 lime
  • 1.5 cups coconut water
  • .5 tsp cayenne pepper 

Blend in high speed blender for 30-45 seconds. Add more liquid if need be (water). Pour into popsicle mold and freeze overnight.

ENJOY!
