Nutty Seedy Granola Recipe

I have many fond memories of my parents house being full of the intoxicating smell of homemade granola baking in the oven. The roasted nuts combined with the sweetness of honey or maple syrup. YUM! 

I recently decided to do my own take on my moms homemade granola. I chose to use all nuts and seeds compared to the classic oat based granola. Most oats are not gluten-free, and I wanted to make this recipe ok for all my GF friends. This granola is rich in healthy fats and minerals. I like to enjoy it with some almond/coconut milk and blueberries, or just on its own as a healthy snack. It is quite filling and so you only really need about 1/4 of granola cup per serving.  

Recipe

  • 1 cup chopped cashews
  • 1 cup chopped almonds
  • 1 cup chopped walnuts
  • 1/2 cup pumpkin seeds
  • 1/2 sunflower seeds
  • 1/4 cup pure maple syrup (or honey) 
  • 1/4 cup coconut oil (melted)
  • pinch of sea salt 

 

Instructions:

Pre-heat oven to 300 degrees

Combine all chopped nuts and seeds in a parchment lined baking pan. Melt the coconut oil and maple syrup together on the stove. Drizzle over nuts and seeds and mix well. 

Place pan in oven and bake for roughly 10 minutes. Remove pan and give the granola a good stir. Put back in the oven,  check on the granola and stir approximately every 10 minutes until it is nice and golden brown.

Let cool out of the oven and store in a air tight container.

Cacao nibs and chia seeds make a great addition after the granola has baked!
